2 beef stock cubes
500g-1kg mince
1 onion finely diced
1 cup tomato sauce
salt&pepper to taste
2 tabelspoon of tomato paste
1 cup thickened cream
1-2 packets canelloni tubes
1 can condensed tomato soup


1. Fry onion and then add mince. Cook until mince is just cooked and then add tomato sauce,tomato paste,beef stock cubes and salt & pepper to taste. Simmer for 2-3 minutes and then allow to cool.
2. Spray baking dish and then stuff the tubes with the cooled mince mix. If mince mix is too hot, the tubes will crack. Line the baking dish with the stuffed tubes. Do not stack the tubes on top of each other, as they wont cook through.
3. Mix the cream and tomato soup together and pour over stuffed tubes and cover the baking dish with foil.
4. Cook at 180 C (350 F) for 45 min and then remove foil and cook for a further 2-3 min.

You can top with cheese. If you want to do this, only cook for 40 min and then remove foil and top with cheese and cook for a further 10 -13 min and then serve.
