Combine corn, flour, eggs, chives and onion in a bowl.

Heat oil in a large, non-stick frying pan over medium heat. Using 1 tablespoon mixture per fritter, cook 8 fritters for 4 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel. Repeat with remaining mixture to make 16 fritters. Cool. Place in an airtight container. Cover. Refrigerate.

Make Avocado salsa: Combine avocado and lemon juice in an airtight container. Refrigerate. Place capsicum, onion, coriander and sweet chilli sauce in a bowl. Stir to combine. Transfer to a separate airtight container. Refrigerate.
